Brinjal / Vankaya Bajji Curry Recipe How to Make

          Hi friends, today am sharing lunch box recipe curry "Brinjal Bajji curry"...  Its preparation is so fast and tasty recipe simple ingredients to prepare this recipe... 
Ingredients :-

  • Brinjal / Vankaya 1/4 kg
  • Tomatoes 2 medium
  • Onions 2 medium
  • Green chilies (as u like spicy)
  • Tamarind little bit
  • Turmeric powder 1/4 tsp
  • Rock salt to taste
  • Oil 3 tsp
  • Mustard seeds 1 tsp
  • Cumin seeds 1 tsp
  • Urad dal 1 tsp
  • Garlic cloves 4
  • Fenugreek seeds 1/4 tsp  
Preparation :-

  1. First take a cooker add chopped brinjal, chopped onions, chopped tomatoes, tamarind, turmeric powder, chopped green chilies, water 1/2 glass and close it with lid boil it for 3 to 4 vessels.....
  2.  After 4 vessels switch off the gas and leave it for cool, now open the lid add rock salt mash it like this........
  3. Now take a wok add oil to heat, then add mustard seeds, cumin seeds, fenugreek seeds to fry, then add crushed garlic cloves to fry.. Then add mashed brinjal mix it well for.... Now move it to a serving bowl serve it.....
Now the dish is ready to serve..... This recipe is so fast and so tasty curry, it good to serve it with lunch box with papad ..
